Raspberry Whipped Cream

Makes about 1 cups.

C ripe raspberries

C heavy (whipping) cream

1 to 2 TBS confectioners' sugar to taste

Puree the raspberries in a food processor. Pour through a fine strainer set over a bowl, pressing hard on the solids to extract as much liquid as possible. (You should have about C puree.)....
