Luscious Raspberry Curd

Makes about 1 cups

A curd is custard made with butter rather than milk. A potato masher makes quick work of mashing the berries.

C (1 stick) unsalted butter

Two -pints ripe raspberries, or one 12-oz package frozen raspberries, thawed

5 lg egg yolks, lightly beaten

C sugar

Pinch of salt
