1 lg eggplant

1 clove garlic (crushed)

1 tsp salt

¼ C sesame seed paste (tahini)

2 TBS water

¼ C lemon juice

Garnish:

Lemon wedges

Parsley, finely chopped

Olive oil

Set oven at 375 degrees. Wash eggplant and remove stem. Pierce with a fork 4-6 times. Place in baking dish. Bake....
