In Mexico, pico de gallo is any kind of salad, often fruit based.

Chop several oranges, cutting off the skin and white pith with a sharp knife, then cutting out and chopping the segments. Mix with a bit of minced serrano pepper, cayenne pepper, salt, black pepper and cilantro, to taste. Saturate....
